Viscosity and apparent specific volume of buffalo milk casein micelles

Thesis Panjab University 1974 Malik, R C Summary: On applying equation the values for voluminosities came out to be 2.96 g/ml for brown swiss, 2.80 ml/g for sahiwal, 3.28 m/g for tharparkar, 3.12 ml/g for buffalo micellar casein. It was found that apparent specific volume was more in case of cow micellar casein than in case of buffalo micellar casein. By taking the reciprocal of apparent specific volumes densities were found to increase as buffalo greater than sahiwal -greater than-tharparkar micellar casein. The degree of hydration as calealated from the voluminocities and apparent specific volume came to be 2.106 ml/g for sahiwal 2.458 ml/g for tharparkar and 2000 m/l for buffalo micellar casein.
